Couple a questions:
 
First, would symptoms of failing CV Joints include: shuddering upon
acceleration and deceleration?
 
Second, is it easy to replace (of course with right tools and
knowledge)?

this is my first time posting, but i've been reading the posts for 4 months 
now. 
i
i have had some bad experiences with cv joints.. 
if a cv joint is completely busted, you won't be able to drive your car.  
when my left inner joint broke  there was a loud popping noise and the car 
"jumped" whenever there was a pop.. as if the axle wasn't flexing.. and was 
stuck at a certain angle. i later found after some inspection that the balls 
inside the cv joint were out of place. . The popping noise was loud!! and 
sounded like you were breaking something everytime you moved an inch... 
it seems like your problems aren't this bad.. 
last week i heard a similar sound to the lound popping but wasn't as loud.. 
but my car was cool to drive as long as i went slow... i later found out that 
my front engine mount bolt was broken and any hard acceleration would cause 
my engine to move and then slam back into the motor mount and make  a loud 
noise... perhaps that is your problem...

if it is your cv joints, it's a long process
first you have to take your axle off, and if you haven't done that yet, it'll 
be hard.. vw has a special tool to make it easier to push the axle out of the 
wheel hub. ..  you need a special 12 point tool to take out the bolts that 
connect the axle to the transmission...  it's a lengthy process... anyway...  
hope it isn't your cv joints because i went through that and i sure didn't 
enjoy it...

there are 2 parts to a cv joint, the inner and outter, when the outers go 
they click when you turn, when the inners go the either can just break and 
leave your as stranded or usallu you can feel  thumping sound towards the 
center middle, good luck hope this helps

when mine went out I had a shuddering when I drove it, VW replaced them under 
warranty, which is nice because I know that I messed them up. Turning your 
wheels all the way and hitting the gas isn't good on CV's.

Turn the wheel to lock and drive slowly.  If the noise is more pronounced then you probably are looking at a
bad CV joint.  The rubber boot rips and dirt and road shit get in there and causes the CV joint to make a
grinding noise.
