I just put on RAZO Aluminum-Magnesium pedal covers on my Golf VR6 and
they look great. Now before you go out and buy pedal covers, there's
something you need to know. I am not sure how this stands with the other
Golfs/VW's, but with my 98 Golf VR6, the brake pedal is a metal bar
which has been flattened at one end to form the pedal. This is NOT good
for some pedal covers as the clip-on kind require a lip on which to
secure the covers to the pedals.
The ones I got were the clip-on kind and it took me a while and a lot of
sweat to finally mount the brake pedal cover. Mind you, it can be done
with no modification to the pedal or the pedal cover itself. It just
takes some creativity.

My recommendation is for you to get screw-on pedal covers, if you don't
mind drilling a couple holes into the pedals. They are also more secure
than the clip-on variety. The screw-on type also generally run cheaper
than the clip-on type. RAZO makes some nice pedals, but they are fairly
common and kinda expensive. MOMO has some decent aluminum screw-ons but
I don't like the way they look. Sparco [if you can find them] has some
really nice pedals for a good price. There is an all alu one with rubber
nubs for grip, and an all-black carbon fiber one which is really cool.
In any case, try to look for covers which have height adjustable gas
pedals [like RAZO]. This will help in heel-toeing coz [imho] the stock
gas pedal is just too far down.
